Ornate Frame Cake with Gold Leaf, Damson Blossoms & Hypercium Berries!

Here’s an incredibly decadent small frame cake we designed and created for a wedding. For this cake we were pretty much given full creative control with just a few definite design requests from the happy couple that included lots of gold, simple blossoms, a lavish style in terms of overall look and a bit of an autumn/winter feel to the end cake.

With all of the fabulous elements that the couple requested in mind we decided upon a bit of a Rococo (always a favourite) influence combined with a luxurious jewel-inspired colour palette which pairs wonderfully with gold and copper accents.

The small bouquets nestled onto the cake are all hand-made from cmc reinforced sugarpaste / gum paste. Following the request for simple blossoms we picked out the silk taffeta damson-style blossoms from the table centrepieces and invites to use as small arrangements adorning the cake. Each was lightly dusted with shimmering gold lustre dust and further accented with burgundy tinted hypercium berries and sugar leaves.

When we designed the cake a few sketches featured the use of grosgrain ribbon to add a little dimenson to the cake’s decor. This idea came from looking though fashionable attire that straddled both the Rococo era and Baroque for women’s necklaces being tied about the neck with silk ribbons. After initially assembling it was clear a little bit of black grosgrain ribbon with chevron snipped tails was needed.

To a nice element of drama as well as to fulfil the couple’s request for lots of gold we decided to carefully gild the smaller top tier with sheets of edible gold leaf. This also added a wonderful bit of texture and a touch of the rustic look. 

Using gold leaf is fairly costly and can be quite the challenge. Applying the edible gold took a fair bit of steadiness as well as minutes of holding one’s breath to complete. Our tips for trying out this technique is to use cake decorating tweezers to lift the top two corners of the sheet, carry it slowly to the cake and drape over the side and top before lightly brushing the leaf on to the tier. Also, don’t wet the fondant covering of the cake before doing so!

It was so sad to see this stunning piece leave us as it is definitely our style of cake from the realistic florals to the lavish usage of gold. 

 

Batman Themed Minion Cake!

This super fun Batman themed Minion cake was a last minute request but we couldn’t resist! We think this mischievous little cake is perfect for a birthdays so close to the festivities of Halloween from it’s sleek black costume to the Batman symbol embossed cake board!

Minion cakes are insanely popular and they’re always fun to make especially when people request an extra twist like crazy costumes or quirky flavours! They can be transformed into almost anything which makes them perfect for most occasions; imagine a minion cake disguised as a pumpkin for a Halloween party centre piece, or even as a Christmas tree? What about dressed up as the recipients favourite singer or movie character? Needless to say, we love making them!

The cake itself was a freshly whipped up classic Victoria sponge featuring Madagascan vanilla buttercream and home made strawberry preserve. We filled, stacked, carved and crumb coated the shape before chilling it and covering it with custom coloured yellow fondant. The super-minion really began to look the part when we’d finished the iconic mask, ears and all!

One of our favourite features was the Batman embossed cake board which we covered with grey fondant / sugar paste, embossed with a small Batman cookie cutter and then dusted with edible silver lustre dust for a cool metallic sheen!

For the fun name plaque we were inspired by the Batman light signal from the films and comics! We used tylo reinforced fondant to create the bright yellow and grey fondant circles to emboss and hand paint onto before attaching to the side of the cheeky Minion character! 

 

Woodland Inspired Wedding Cake!

Woodland and nature inspired cakes are one of our favourite styles of wedding cakes to design and make. We love so many aspects of wilderness from overgrown gardens to awe-inspiring mountain landscapes that have to admit quite the pangs of excitement when a happy couple share their nature influenced cake ideas with us! This woodland themed three tiered cake is no exception of course.

This tall cake features a deep middle Cherry Bakewell flavoured (almond cake with almond oil buttercream and black cherry preserve) tier. The cake is flourished with sugar bramble berries, hellebore flowers, damson blossoms, ruffled scabiosa flowers, various fantasy berries, golden feathers, edible moss, painted bugs, various mushrooms and white chocolate bracket fungus!

One of our favourite elements of this cake are the sugar bramble (or blackberry) berries! They’re incredibly time consuming, but done well and with a healthy dose of patience they can look so much like the real fruits themselves. Plus we adore the quirkiness of them.

The couple wanted some elements of gold included in their cake so we used gold pearl stamens (these are such a favourite in the studio for adding a touch of glamour to floral sprays that we’ll be stocking these soon), gold lustred damson blossoms, champagne glimmer dusted bracket fungus, golden feathers, edible gold glitter sprinkled in with the ‘moss’ and a gold ribbon to trim the board.

The addition of the small fondant muchrooms, bracket fungus and moss adds quite a carefree, quaint and nature-loving look to the overall design especially partnered with the usual florals and bramble berries! Each mushroom is fondant or white modelling chocolate with light hand-painted accents!

This design sure was a pleasure to create. We loved every aspect from the glimmering fondant bees to the unusual and striking scabiosa flowers!

 

Gruesome Zombie Finger Cupcakes!

With Halloween fast approaching we’ve been working on a super fun and rather fang-tastic collection of cake and cupcake tutorials (complete with delicious recipes)! For our first Halloween inspired tutorial we’re going to show you how to whip up some Gruesome Zombie Finger Cupcakes. These terrifying cupcakes are perfect for spook-tacular kids parties and shindigs!

Materials and tools needed:

Step by step fondant zombie fingers by Juniper Cakery

Step 1:

Mix grey/green fondant or sugar paste with CMC/Tylo powder (approx. 1/2 teaspoon powder per 150g) and shape into a sausage shape around 5cm in length and 1 1/2-2cm in width. 

Step 2:

Work to make the sausage shape taper at one end. To create the ‘knobbly’ knuckle look use your index finger and thumb to squeeze slightly at both sides of where a knuckle would naturally occur.

Step 3:

Take a veining tool and scour lines along the knuckle and joint areas of the finger.

Step 4:

Carefully press a half oval shape into the tapered end to create a nail bed.

Step 5:

Mix a little CMC in the grey or beige, depending on preference for the nail, fondant/sugar paste and roll out.

Step 6:

With a blade tool or scalpel cut out small rectangles from the fondant.

Step 7:

With the veining tool scribe some rough ridges vertical-wise down the nail. Attach to the finger with a little edible glue.

Step 8:

For some extra detail lightly dust the knuckles, joints and the area below the nail bed with some black, brown or dark green blossom dust.

Magnolia and Gold Sequin Wedding Cake!

Here’s yet another cake as part of our latest wedding collection, a Gilded Magnolia and Sequin cake! We’re rather enthusiastic fans of using both gold and edible ‘sequins’ in our work and this more modern design is definitely not an exception. Read on to learn more about what inspired this creation!

Gilded sequin and magnolia flower wedding cake by Juniper CakeryWe based this design loosely on a stunning gold sequin gown in Elie Saab’s A/W 2012 collection. We simplified the design with plain ivory tiers and large sugar magnolia flowers featuring gold dusted centres. Originally, sugar Juliet roses were to feature perched upon each tier, however, we thought that a more structured floral would work better and also add a more sleek look to the end design.

Magnolia and Sequin Wedding Cake by Juniper CakeryTo add a touch of the romantic we covered and trimmed the board with blush pink fondant and a gorgeously sumptuous liquid gold ribbon finished with our usual double looped bow held with a crystal tipped pin. The board itself ended up being somewhat reminiscent of the Miss Dior Cherie perfume bottles and packaging!

Gold sequins on wedding cake by Juniper CakeryThe ‘sequin’ look can be a fairly time consuming and costly process, but it’s certainly worth it if you have the time, resources and patience and if you’re looking for a show-stopping technique! We lost count of how many large bottles of edible gold paint it took to paint this.

Gold Magnolia Wedding Cake with Sequins by Juniper CakeryWe created the magnolia flowers ourselves, as with all of our florals. To begin the process of flower making we always sit down and analyse photographs making notes of texture, sizing, curve, petal count and colour. There are times, however, when a little creative licence is needed so that a particular bloom works with a design rather than against it. These white magnolias were inspired by the Milky Way variety, but instead of the deep pink centres we created them out of ochre gum paste and stamens dusted gold.

We enjoyed creating this design. Even though it is a little bit of a departure from our own personal style, which leans towards more the historical and woodland inspired (think Rococo and Georgian influences with dark Germanic legends and forests), we think it still manages to encompass our typical look but with a touch of the modern thrown in!

 

Cherry Blossom & Golden Frame Wedding Cake!

At the moment we’re super busy working on a collection of designs to show at the Kingston-upon-Hull Guildhall Wedding Show, which is incredibly exciting albeit tiring! As we finish off our five designs we thought that we’d share some final photographs of a finished cake; our four tiered Rococo-inspired cherry blossom wedding cake…

Pretty cherry blossom wedding cake by Juniper CakeryThis is easily one of our favourite designs in the collection. It is a lovely clean design with detail featuring only on the front of the cake. We created a hand quilted frame inlay of white fondant brushed with glimmering lustre dust before applying pieces of ochre coloured fondant mouldings around the edge and finally hand painting this feature with edible gold paint.

Originally, we had sketched this design with roses, hydrangeas, apple blossoms and cherry blossoms; however, we finally chose to stick to simple frosted fantasy berries, sugar leaves, and hand-made ruffled pink cherry blossoms!

Golden frame and cherry blossom wedding cake by Juniper CakeryThe little pops of bright pink from the sugar cherry blossoms add another dimension to the cake and help liven and brighten up the white and ivory tiers. Utilising a more simple floral style helps keeps the main focus of the cake on the ornate gold frame as well as keeping the ye moving up and down the design!

Rose, Cherry Blossom & Hydrangea Topsy Turvy Cake!

Topsy turvy cakes are always fun cakes and we love the ‘Alice in Wonderland’-esque structure and shape of them especially for birthday and wedding designs. Here’s a lovely floral adorned topsy turvy cake that we finished recently! We love the mix of ombré roses, blush pink cherry blossoms and porcelain white hydrangeas with the quirky shape and varied stripe detail.

For this design we were asked to re-create the infamous pink cake that Cheryl Cole received for her 31st birthday. The only image  found of this particular cake is a small camera phone image from Cheryl Cole’s twitter account so a few details were essentially open for interpretation.

We quilted a pink fondant cake drum to add a lovely chic look and trimmed the board with cream grosgrain ribbon before stacking the cake together to decorate. All of the flowers are edible and hand-made by us before they were dusted with colour and a lovely hint of sparkle! We especially love the white on white of the hydrangea blossoms on the top tier.

It’s a lovely bright red velvet cake inside sandwiched with a vanilla bean and white chocolate buttercream; we always love baking red velvet! It’s such a fabulous and vibrant cake and always a thrill to whip up due to the glamorous deep red colour. We used white chocolate in our buttercream to help keep such an angled cake stable when being stacked and carved.

To make the ombré roses we made modelling paste/gum paste buds and left them to set overnight before adding petals in blush pink and white. We added the brighter pink colour with blossom dust and then added a glimmering sheen with edible lustre dust; our favourite is Sugarflair’s Snowflake which has lots of fabulous sparkle to it!

For a fun birthday not only is a bold and lively cake the perfect centrepiece to the party, but a ‘wonky’ topsy turvy cake helps add a nice touch of whimsy. We loved creating this cake from the clean white hydrangeas to the angled cake tiers!

 

Naked Cake with Rosemary & Candied Lemon Slices!

Every year we’re asked to create a birthday cake that utilises less fondant and sugar for the same diabetic client. This year, eager to try out the latest of cake trends, we whipped up this gloriously colourful naked birthday cake with them in mind! It’s a vanilla, lemon and white chocolate naked cake adorned with a flurry of roses, fruits and herbs!

Decorating a freshly baked cake with bright roses, berries and sprigs of rosemary instantly added a touch of rustic glamour to the vanilla layers sandwiched with our whipped lemon oil and white chocolate buttercream! For a late summer birthday we opted for the most vibrant roses we could source so that this cake would feature some lovely pops of colour throughout.

We used sprigs of freshly cut rosemary, blueberries, cherries, candied lemon slices, and bright roses to adorn this vanilla pod infused cake. The rosemary makes a rather fabulous (and edible) way of adding a feather-like aspect to the design. For future naked cakes we simply love the idea of covering the odd blueberry with decadent gold leaf, adding aromatic cinnamon sticks, using exotic star fruit slices and large sage leaves to add a quirky slant on the usual decoration of fruits and flowers!

The cake was placed on a quilted and sugar pearl studded board that was then trimmed with a luxurious liquid gold ribbon finished with a bow! We loved the idea of pairing the bright coloured roses with a little bit of gold and some Chanel influenced quilting for glamorous touch.

Some other fabulous ideas for more unusual naked cakes include red velvet layers, vanilla cakes filled with sprinkle infused buttercream, or a dark chocolate cake paired with a salted caramel and Nutella buttercream; perfect for the discerning and adventurous epicurean!

Silver Vintage Lace Wedding Cake!

We know it’s not even autumn yet (due September 22nd no less), but we couldn’t help but begin to feel ever so festive and ready for winter when working on this silver vintage lace inspired wedding cake! It certainly was a delight for us to design this cake from the strands upon strands of pearlescent fondant pearls to the hand-piped royal icing lace design.

When creating this tiered cake we took inspiration from vintage lace, Wedgwood silverware, soft fabric corsages and strings of pearls. The main focus needed to be on the centre of the cake so we began sketching out three tiered designs that played with different cake depths and proportions before settling on a cake that utilised a deep middle tier.

To further draw attention to the centre of the cake, but not overload the overall design with too much fussy detail we looked at small repeat patterns in vintage lace and quickly sketched out a rough version of what we’d need to re-create using small blossom cutters and royal icing. Utilising tiny flower cutters is a great way to mark and plan out a lace design on a cake.

To finish we decided to add a little softness to the top with a ruffled fantasy flower created using thinned flower paste circles gently ‘balled’ and teased in delicate white frills. Due to the tiny blossom lace design that features as the main design aspect of this cake we kept the flower topper simple and unassuming.

As the months have gradually gotten colder this cake has only added to our excitement for winter; one of our favourite seasons. We love how the shimmering pearls mimic expertly rolled snowballs and that from a distance the royal icing piped lace could be frosty snowflakes!

In late 2013 DK Books/Publishers approached us with a list of popular kids’ birthday cake ideas for their new book, Step-by-Step Kids’ Birthday Cakes, and we were more than happy to design and create a small collection of vibrant and playful cakes; perfect for children’s parties! Here’s a super fun and cute dinosaur egg cake we created. It’s covered with fondant and features some very novice hand-painted work along with some playful edible accents such as the tale, head and spots. To add an extra sweet touch we added a small piece of ‘broken shell’ out of fondant to perch atop of the baby dinosaur’s head!

We loved the idea of having some very iconic circus characters popping out of the big top so we designed the tent to ‘open’ and feature a lion, bear, clown and elephant all smiling out of the front. We also wanted to add an extra playful feature so we created fondant balloons with floral wire string to be attached to the side as though floating up into the air!
