CAKE101: Some essential tools to invest in No. 1!

Not every single tool you’ll need to decorate cakes with will be some super sparkly, expensive, baking specific gadget of wonder. Sometimes all you need is something as humble as a toothpick, a disposable cup or a teaspoon. In fact, as you and your cake decorating progresses you’ll probably find that you’ve gathered an insane collection of items in your tool kit! Some essential items we have in our bakery drawers and cupboards include pizza cutters, zip lock bags, double sided sticky tape, paper plates, make up brushes, dressmakers pins etc.

In this weeks CAKE101 cake decorating / baking tip we recommend one of the everyday items we use the most… wooden toothpicks and kebab skewers!

“Invest in lots of toothpicks and kebab skewers. Little things like these end up being incredibly useful for adding colour to frosting and icing, scribing patterns, adding structure to fondant characters or holding flowers in place!”

EXTRA TIP: To stop your sticks from splintering if you need to cut them up soak them in water beforehand.

Using silicone moulds and tappits can be daunting and really test your patience as fondant and flowerpaste can get stuck into the details which is infuriating. This weeks CAKE101 cake decorating and baking tip is a quick trick to help your moulds easily pop out with minimal or no faults!

“When using moulds to create fondant and flowerpaste lace or jewels brush the mould very liberally with icing sugar or lustre dust. This stops the fondant from sticking to the mould when it’s time to remove your design.”

NOTE: You can also use cornstarch as well as icing sugar or lustre dust!

 

CAKE101: How to pipe two toned buttercream!

This weeks CAKE101 decorating / baking tip is a really striking and surprisingly quick way to frost beautiful swirls of colour onto your cupcakes! You can even use this piping technique to pipe fun coloured roses onto layer cakes or to fill whoopie pies and macarons with. You can even experiment with using three or more colours, create ombré toned stripes or combine multiple flavoured frostings together… yum!

“To swirl your cupcakes with two tone striped buttercream use a tall glass to fill up your piping bag. Fill one side with one colour leaving space on the other side for your next colour! Fill the next side and you’re ready!”

“Never use margarine or low fat spread to make buttercream! These contain a higher ratio of water and will affect the structure and firmness of your frosting.”

Here at Juniper Cakery we love food and can’t bear to scrimp on taste and texture for the sake of fewer calories or grams of fat, but if you want to downsize on the fat in your cupcakes then why not try topping your cakes with home made jam, low fat chocolate spread, or a tasty dollop of marshmallow cream?
