Recipe: Vanilla Rainbow Confetti Cupcakes

When it comes to cake and parties who doesn’t love a fun rainbow theme? These vibrant and delicious confetti cupcakes are perfect for kids and big kids (also known as adults) too! The best thing is that they’re pretty quick to make as well as easy to decorate and even better to eat. Follow our recipe for some party treats that’ll make everyone happy.

Confetti Cupcake Recipe

Vanilla Confetti Cupcakes Recipe (makes approx. 12 cupcakes)

Bright cupcake cases
226g self-raising flour
226g butter
226g caster sugar
4 eggs
1 tablespoon of good vanilla extract
1 bottle of Jumbo Bright Jimmies by Wilton (we’ve found that these are the best to use - stay clear of thin supermarket sprinkles as they tend to bake away leaving no rainbow speckles in your cake)

Step one: Preheat your oven to Gas Mark 3/325F/170C

Step two: Cream the butter with sugar and once well mixed add in the Jumbo Bright Jimmies by Wilton, flour, vanilla extract and then the eggs.

Step three: Set out your cupcake cases in your pan and fill each case 2/3 full.

Step four: Bake from around 12-18 minutes or until a golden brown on top and leave to cool on a counter.

Vanilla Buttercream

250g butter
250-350g icing sugar
1 tablespoon of vanilla extract
Jumbo Bright Jimmies by Wilton
Piping bags
868 piping tip

Step one: Cut your butter into small cubes and cream your butter until soft.

Step two: Gradually add icing sugar until a good consistency.

Step three: Add 1 tablespoon of vanilla extract and mix well.

Step four: Scoop your delicious buttercream into a piping bag fitted with an 868 piping tip (if you’d like to create the linear swirl we’ve piped). Pipe a generous swirl of frosting atop your cupcakes and sprinkles with Jumbo Bright Jimmies by Wilton!

What you will need:

Wax covered sprinkles (we used Rainbow Jimmies Sprinkles by Wilton)
Your favourite cake recipe

First step: Mix together the ingredients from your favourite cake recipe in a bowl or mixer until smooth.

Step two:  Pour in the sprinkles and mix until they’re evenly distributed. At this stage you can decide how many sprinkles to include depending on what result suits you best.

Step three: Bake your cake mix on the same heat you usually would, however, it may need a little longer in the oven as the sprinkles can change the consistency and even add moisture. Check regularly with a cake tester to ensure you don’t over bake.

Step four: Once your cake is ready you should be able to see the bursts of colour from the sprinkles which will have exploded with the heat. If this has happened your cake is ready to cool.
