Tea, Macarons & Recipe Book Birthday Cake!

It was our head baker Carol’s birthday last Sunday and of course we created her a rather lovely cake to celebrate the occasion. After a few initial ideas we set our sights on a recipe book themed cake adorned with roses, sweet treats and a rather fancy teacup! We also had to add Carol’s favourite colour purple to the cake’s colour palette to help tie it in with Carol’s birthday decorations and gifts. We didn’t even make her bake the actual cake herself!

We created a lovely little edible teacup with gum paste / modelling paste hand-painted with gold lustre dust edging and detail. Alongside this we also created a matching edible side plate for all of the delicious chocolate truffles to be piled upon!

We have an old tutorial up here to help you create a sweet edible teacup and saucer of your very own!

To add the gold detail with used some gold lustre dust mixed with a little vodka and carefully painted the edges with a fine paintbrush used only for food items. This takes quite a steady hand so practice makes perfect indeed!

Above are our Cherry Macarons, Passion Fruit Macarons and handmade sugar gum paste roses and leaves. We toppled the macarons onto each other and then adorned them with florals to add a nice little touch of whimsy!

For the macarons we created them in sorbet influenced flavours such as Raspberry, Passion Fruit and Cherry to help establish a lovely bright, Summer colour palette; perfect for a June birthday!

We added one of our head baker’s favourite recipes for Lemon Drizzle Cupcakes to her recipe book cake by hand-painting in the illustration and ingredients list. The left side of the book cake displays baking instructions for our fruity Strawberry Cupcakes filled with home made strawberry preserve.

We created a sweet yet cluttered scene with the placement of hand-made sugar roses, hydrangeas, chocolate truffles and edible chinaware!

Making the edible teacup took  two hours to cut, shape and paint; it then took some patience and a few days to harden and be ready to assemble and place onto of the cake. A top tip is to use melted white chocolate in a disposable piping bag to seal the joint of the teacup and affix the shaped handle to the side. White chocolate sets fast and keeps a good hold.

Here are some of our Raspberry Macarons filled with a raspberry preserve alongside a fruity Passion Fruit Macaron filled with a lemon curd whipped buttercream.

Some of the extra features on this birthday cake are sugar hydrangeas, a gold painted braid bookmark, hand-painted wood stained board and a lightly ruffled napkin placed underneath the perched edible teacup.

We’re happy to say that we not only had the chance to actually devour a little bit of this cake, but that Carol seemed to be rather enthralled with her birthday cake!

Gold and Peach Fabergé Egg Cake!

Here’s a rather lavish and beautiful cake we finished over the weekend created for a Fabergé enthusiast. Our brief was to create a Fabergé Egg inspired cake with a peach, gold and ivory colour palette, lots of bas-relief elements, studded pearl details, sugar roses and hydrangeas and a personalised monogram. Below is the lovely petite creation that was our end result!

When designing a bespoke cake we first have a meeting together to sit down and discuss everything from what materials and ingredients are needed, colour palettes, size, and design. Every cake gets roughly sketched out with notes on details, structure and ideas.

For this cake we first planned and created the egg cake topper from home made rice cereal treats moulded into a large egg shape, covered in buttercream, then iced in fondant and iced a second time in custom coloured fondant before all the detailing could begin.

Here’s a look at our hand-made ivory sugar roses and gold painted rose leaves. For cakes we create every floral element ourselves as we simply love creating beautiful blossoms and floral sprays from elegant roses to ruffled peonies. A lot of cake decorator’s still buy ready-made florals to nestle on top of cakes, but we find think this limits customisation and character… plus we like to be involved in every processes of a cake design for fear of feeling a little lost or disjointed.

The back of the Fabergé egg was finished with hydrangeas and stylised leaves then hand-painted with edible gold paint. We played with the back of the cake to add a few more random design elements than the more regimented and symmetrical bas-relief mouldings on the rest of the cake.

The cake board was quilted, hand-painted with an edible gold paint and then studded with sugar pearls. On its own it looked quite Liberace influenced. It would have been quite something to place a sugar diamond encrusted grand piano cake on top instead!

Inside, the cake is our soft and delicious chocolate cake filled with lashings of silky smooth whipped chocolate and Hennessey VS Cognac infused buttercream. After torting the layers, stacking, filling and crumb coating we then iced the cake with a custom coloured peach fondant, adding a pearl royal icing piped border and then the bas-relief elements.

We hope this small but grand cake was enjoyed by all as we loved creating it. It’s always wonderful to see a cake come together and begin to take form when all the florals, mouldings, and hand-painting is added. We adore the ornate styling of this cake and can’t wait to create another; perhaps the Liberace inspired piano next!

Rose and Fuchsia Wedding Cupcake & Cake Tower!

Here’s a lovely and sweet cupcake tower topped with a floral adorned cake that we created for a late spring wedding. A sumptuous and over-hanging bouquet of ivory roses and lilac fuchsia flowers were requested. We also whipped up a large batch of matching cupcakes in some pretty mouth-watering flavours; Mango & Passion Fruit, Red Velvet, Lemonade and Raspberry!

 The cake itself was a lovely and moist vanilla sponge filled with delicious strawberry jam and iced with vanilla fondant. We then embossed an ivory fondant covered cake drum with a pretty lace mould, trimmed the board with grosgrain ribbon and once we placed the cake on top it was finished with royal icing polka dots, a royal icing pearl border and handmade sugar flowers!

The bouquet is made of 7 ivory roses, 9 fuchsia buds, 9 small fantasy berries, 9 fuchsia leaves, 8 rose leaves and 10 fuchsia flowers all made from scratch by our hard-working hands and from custom coloured gum paste!

To accompany the cake the wedding tower was completed with 100 cupcakes. We baked them all fresh and from scratch before filling the Lemonade cupcakes with home-made lemon curd and the Raspberry cupcakes with home-made raspberry confiture! For the Mango and Passion Fruit cupcakes we frosted them with a lovely two toned swirl; lilac for the passion fruit flavour and ivory for the mango flavour!

Gold & Purple Ranunculus Wedding Cake!

We created this stunning golden four tier ranunculus wedding cake earlier this week. It’s adorned with a mix of handmade fantasy gold and white berries, pale elderberries, bramble berries and bramble leaves as well as violet, lavender, white & ‘picotee pink’ ranunculus flowers. A must for this cake was that it incorporated an autumnal theme. For this we took brighter and bolder colours (purple, dark pink and gold) popular in fashion for autumn/winter collections. We then teamed them with white, ivory and pops of fresh greens to keep them from being obvious autumn hues.

The largest tier was covered in individually cut ‘sequins’ of ochre coloured fondant before being hand painted in edible gold lustre paint (lustre dust mixed with a few drops of either lemon juice or vodka) a few times. Despite it taking a back-breaking 10+ hours to complete it’s such a fantastic technique that evokes a gorgeous luxury look to any cake!

The second largest tier at 12 inches in diameter was iced in ivory fondant before we added matching ornate ‘frames’ around the cake. We love how these mouldings as a beautiful antique feel to the cake.

The second smallest tier was dry painted with edible metallic gold and bronze paint to create a an extra element of texture as well as add more luxurious gold!

Each berry and flower was hand made from gumpaste / edible modelling paste. The ranunculus (also known as persian buttercups) blossoms and blackberries all took a full 2 days to make (not including leaving the gumpaste buds to set for 4 days before hand).

The darker pink edged ranunculus flowers were hand painted using a dry brush technique to add the lovely ‘streaks’ of deep fuchsia around and along each petal.

Finally, the top tier was covered in a mustard coloured fondant before we painted it with edible metallic gold paint. The use of mustards and gold tones help set off the purples and and dark pinks of the ranunculus blossoms; of course they  incorporate a lovely touch of glamour to the wedding cake.
