Strawberry milkshake ombré with white chocolate and mini egg ‘bark’

Our Strawberry milkshake flavour was inspired by both a fabulous 1950s style diner we visited in Dublin and Felicity’s childhood spent in the Californian sun (where weekends involved drives around San Francisco with carousels, Arby’s Roast Beef sandwiches and malted strawberry shakes and rainbow sherbet ice cream). It’s an incredibly fragrant cake too and is the perfect mix of fun and fancy! For Easter we’ve adorned the Strawberry Milkshake cake with crumbled mini egg chocolate shards, but of course you could add fresh strawberries on top of each buttercream swirl or even a sweet hand-painted message! Email us or inbox us via Facebook for to enquire!

Tea, Macarons & Recipe Book Birthday Cake!

It was our head baker Carol’s birthday last Sunday and of course we created her a rather lovely cake to celebrate the occasion. After a few initial ideas we set our sights on a recipe book themed cake adorned with roses, sweet treats and a rather fancy teacup! We also had to add Carol’s favourite colour purple to the cake’s colour palette to help tie it in with Carol’s birthday decorations and gifts. We didn’t even make her bake the actual cake herself!

We created a lovely little edible teacup with gum paste / modelling paste hand-painted with gold lustre dust edging and detail. Alongside this we also created a matching edible side plate for all of the delicious chocolate truffles to be piled upon!

We have an old tutorial up here to help you create a sweet edible teacup and saucer of your very own!

To add the gold detail with used some gold lustre dust mixed with a little vodka and carefully painted the edges with a fine paintbrush used only for food items. This takes quite a steady hand so practice makes perfect indeed!

Sugar gum paste roses and macarons by Juniper Cakery

Above are our Cherry Macarons, Passion Fruit Macarons and handmade sugar gum paste roses and leaves. We toppled the macarons onto each other and then adorned them with florals to add a nice little touch of whimsy!

For the macarons we created them in sorbet influenced flavours such as Raspberry, Passion Fruit and Cherry to help establish a lovely bright, Summer colour palette; perfect for a June birthday!

Cute recipe book cake by Juniper Cakery

We added one of our head baker’s favourite recipes for Lemon Drizzle Cupcakes to her recipe book cake by hand-painting in the illustration and ingredients list. The left side of the book cake displays baking instructions for our fruity Strawberry Cupcakes filled with home made strawberry preserve.

We created a sweet yet cluttered scene with the placement of hand-made sugar roses, hydrangeas, chocolate truffles and edible chinaware!

Gum paste edible teacup by Juniper Cakery

Making the edible teacup took  two hours to cut, shape and paint; it then took some patience and a few days to harden and be ready to assemble and place onto of the cake. A top tip is to use melted white chocolate in a disposable piping bag to seal the joint of the teacup and affix the shaped handle to the side. White chocolate sets fast and keeps a good hold.

Some of the extra features on this birthday cake are sugar hydrangeas, a gold painted braid bookmark, hand-painted wood stained board and a lightly ruffled napkin placed underneath the perched edible teacup.

We’re happy to say that we not only had the chance to actually devour a little bit of this cake, but that Carol seemed to be rather enthralled with her birthday cake!

Rose and Fuchsia Wedding Cupcake & Cake Tower!

Here’s a lovely and sweet cupcake tower topped with a floral adorned cake that we created for a late spring wedding. A sumptuous and over-hanging bouquet of ivory roses and lilac fuchsia flowers were requested. We also whipped up a large batch of matching cupcakes in some pretty mouth-watering flavours; Mango & Passion Fruit, Red Velvet, Lemonade and Raspberry!

The cake itself was a lovely and moist vanilla sponge filled with delicious strawberry jam and iced with vanilla fondant. We then embossed an ivory fondant covered cake drum with a pretty lace mould, trimmed the board with grosgrain ribbon and once we placed the cake on top it was finished with royal icing polka dots, a royal icing pearl border and handmade sugar flowers!

The bouquet is made of 7 ivory roses, 9 fuchsia buds, 9 small fantasy berries, 9 fuchsia leaves, 8 rose leaves and 10 fuchsia flowers all made from scratch by our hard-working hands and from custom coloured gum paste!

To accompany the cake the wedding tower was completed with 100 cupcakes. We baked them all fresh and from scratch before filling the Lemonade cupcakes with home-made lemon curd and the Raspberry cupcakes with home-made raspberry confiture! For the Mango and Passion Fruit cupcakes we frosted them with a lovely two toned swirl; lilac for the passion fruit flavour and ivory for the mango flavour!

Antique Red Rose Wedding Cake!

Here’s an eye-catching wedding cake we created for a ceremony this weekend. We were asked to make a three tiered creation incorporating red roses. We kept a lovely traditional look to this cake by only adding small details such as the quilted and pearl studded board, royal icing pearl borders and fondant Neo-classical inspired frames alternating on each tier. The dramatic deep red roses were to remain the key focal aspect of this cake so we made them a little more playful by adding curled fondant rose petals drifting down the sides.

A total of 40 hand made gumpaste roses adorn the top and sides with bright pops of green rose leaves. The small fondant rose petals were added as a finishing touch to create a romantic yet slightly whimsical feel to an otherwise dramatic wedding cake.

We love the detailed frames which are somewhat reminiscent of Neo-classical medallion backed chairs. Adding these to each tier of the cake helped to incorporate texture and dimension as well as a wonderfully theatrical antique look to the end result.

We thoroughly enjoyed working on this design as we got to play with some elegant yet dramatic ideas from crafting dozens of red roses to the idea of incorporating an antique aspect in the design.

40th Birthday Star Wars Cake!

Here’s a super fun Star Wars themed birthday cake we created this week! We had such fun making this. Everything is edible from the rice krispy treat moulded Death Star to the modelling chocolate Chewbacca!

The cake itself consists of two layers of vanilla with a blue velvet layer in the middle. All layers are sandwich with Bailey’s irish cream infused buttercream… yum!

To make the Death Star we moulded the shape from rice krispy treats, iced it, added the details with modelling tools and silver dragées, then covered it with dark silver lustre dust.

Here’s our cartoon style Yoda figure which was created out of both modelling chocolate and reinforced fondant /gumpaste.

Chewbacca stands just over 4 1/2 inches tall and is made entirely out of a modelling chocolate and fondant / sugarpaste mix. To finish we hand painted Chewy’s fur with a darker brown food colour to add a little depth.

Finally, the text was (painstakingly) cut out by hand. We created a stencil of the required phrase printed out in the Star Wars font before cutting each piece out of reinforced fondant / gumpaste.

Hoppy Birthday Giant Cupcake

DSC_0033

We had lots of fun creating and sharing our Easter tutorials last week! By the end of the week we had to create a fun Easter themed birthday cake for a family member. We decided that our Easter bunny and chicks would be perfect nestled on top of a bright giant cupcake! We teamed our cute  little characters with rainbow sprinkles, and a flowerpaste banner coloured with Squires Kitchen’s Bluegrass gel paste colour for a playful brightness. If you need to re-create this cake why not play with different sprinkles and colour; use flower shaped sprinkles on top of green buttercream for a lovely garden theme, or use Oreo crumbles as patches of soil!

Hoppy Birthday Giant Cupcake

To create our giant cupcake we used our giant cupcake pan and the following recipe…

7-8 eggs
453g self raising flour
453g granulated sugar
453g butter

NOTE: If you add cocoa powder to create a chocolate cake add some extra butter or an extra egg to make up for the extra dry ingredients.

To make the cake cream the butter in a mixer then add the granulated sugar. Add in the flour along with half of the eggs for around one minute. Once half of the eggs are combined add the remaining and mix for approximately 5 minutes.

Once fully mixed pour into the ‘cupcake case’ section of your giant cupcake pan. The ‘buttercream’ or ‘top’ section of the giant cupcake is more shallow and needs less time to bake so the batter to this half needs to be added when the ‘cupcake case’ section is half baked (usually around 20-30 minutes).

Set the cake pan with the ‘cupcake case’ section filled only place on the top shelf of a pre-heated oven at Gas Mark 3/325F/170C. Bake for around 40 minutes to an hour. Keep checking by using a cake tester pushed in and drawn out of the cake’s centre (if the skewer comes out clean then your cake is done).
